Lentil Spaghetti

Lentils can make a great frugal substitute for meats, particularly hamburger/ground meat.  To make lentil spaghetti, I just used about half (in size, not weight) as much dry lentils as I would hamburger meat.  I boiled the lentils until cooked thoroughly, then added tomato sauce and seasonings as I would with normal spaghetti sauce.  Serve over noodles as normal.  I served the meal with these breadsticks, but I’m afraid mine didn’t turn out quite as I had expected.

There is a definite texture difference and some taste difference, but we liked it.  It’s actually been several weeks since we’ve had lentils, so maybe I’ll try to make lentil loaf (meatloaf  substitute) sometime soon!  Hmmm…could be interesting!.
