This week, Hana Kate has enjoyed spending a little extra time with her Aunt Emby! And I’ve enjoyed tasting my sister’s scrumptious creations. Mary Beth has been over this week making several things to sell for a fundraiser. Her most “famous” recipe has been Mocha Truffles! Here’s the recipe she uses. And believe me, it’s tried and true–she has made these countless times ever since getting the recipe in her cooking class last year:
24 oz. chocolate chips 2 tsp water
8 oz. cream cheese, softened 1 lb. dark, confectioner’s coating*
3 tsp instant coffee granules
Melt chocolate chips. Add cream cheese, coffee, and water. Mix well. Chill until firm enough to shape. Shape into balls (large marble size) and place on a waxed paper lined cookie sheet. Melt chocolate coating, dip chocolate balls and set aside to harden. (Refrigeration helps.) May drizzle melted white chocolate coating over the top.
Yields: approximately 60 truffle balls—way too many to eat in one week!
